Single-handedly pushing the dining experience at BocaDos Steak House Restaurant to delectable new heights at Garza Blanca Resort & Spa in Puerto Vallarta, Chef Alvaro Cortez is a force to be reckoned with.  His incredible drive to create a unique gastronomical atmosphere for diners has certainly not gone unnoticed.  Originally from the state of Veracruz on the eastern coast of Mexico, he has enjoyed shaping the direction of BocaDos Steak House Restaurant in Puerto Vallarta for over a year now.  While his downtime is filled with sports and raising five sons, the mouthwatering flavors he produces with his masterful skills in the kitchen are something we can all savor when visiting BocaDos.       

Getting His Start

Deeply influenced by his mother, who was constantly baking and tinkering in the kitchen, his interest in cuisine started early on and continued to develop as he got older.  He went on to study gastronomy, and then food engineering, both of which he holds degrees in.  During his time in school, he also worked at a steakhouse, and it is there that his obsession with meat began.  As he honed his skills on the job, he became especially fond of working with steak, which he views as the perfect starting point for countless scrumptious dishes.   

A Chance Encounter

As his career progressed, he landed a job as chef at La Casona at Villa del Palmar Cancun, sister resort to Garza Blanca Resort & Spa Puerto Vallarta.  In time, he took a position with another company in Cancun, and it was during this period that he was involved in putting together an event called the “Chef Experience”.  Among those in attendance were several members of Garza Blanca’s executive team, and needless to say, they were delighted with what they experienced.  As Chef Cortez had previously worked at Villa del Palmar Cancun, many of the executives remembered him, which opened up a conversation between them all that led to his invitation to join the talented group at Garza Blanca Resort & Spa in Puerto Vallarta.

What’s New at BocaDos

Chef Cortez is thrilled to bring a special version of the “Chef Experience” to Puerto Vallarta, where diners at BocaDos can enjoy dining in a whole new way.  Besides all of the delicious items on the standing menu, an extra-special menu option will be available daily, with these options switching out every three days.  This will give hotel guests and visitors the opportunity to try out new dishes alongside tried and tested menu favorites at BocaDos Steak House restaurant each time they visit.

A delectable new collection of dishes has been created to bring the focus of dining back to having a good time, and these new items will allow you to “play” with your food.  This interactive new experience will serve up dishes that let each diner customize their food, whether that means slicing their own sashimi to their liking or cooking some of the ingredients for their dish right at the table.
