Current executive chef of Katsuya at the SLS Las Vegas Hotel & Casino, Chef Brandon Konishi has established himself as one to watch in the avant-garde movement currently happening in Japanese cuisine. Utilizing his extensive training in Asian fusion cuisine and masterful European techniques, he is consistently on the cutting edge of innovation and shows no signs of slowing down.

As a result of the dedication he lends to his craft, he has been awarded with the prestigious titles of Leader of the Year SLS Hotel 2015 and the Las Vegas Aloha Shoyu Poke Champion. Working under James Beard Award-winning chef Roy Yamaguchi at his preceding job as the executive chef-partner at Roy’s in Las Vegas allowed him to gain priceless knowledge and has proven to be a distinct advantage in his field. He also opened and oversaw the Las Vegas outposts belonging to the Pacific Restaurant Group as their corporate chef-partner.
He has long been a favorite to attend food events, showcasing his skills at the likes of the Aspen Food & Wine Festival and the annual Las Vegas street festival Life Is Beautiful, where this year, in addition to the main event, he is slated to impress the masses of diners at the Grills & Guitars event which kicks off the three-day fiesta that focuses on music, culture and food.
His role as executive chef at Katsuya has afforded him the amazing opportunity to work under master sushi chef Katsuya Uechi, renowned as a major force in modern Japanese cuisine. Uechi is known for his innovative techniques and unparalleled style, which he perfected with more than three decades of hands-on experience in restaurant operation. Katsuya’s Japanese kanji symbol “Katsu” translates to “victory” or “to win” and is definitely appropriate for a restaurant that boasts a devoted fan base, from Zagat critics to Hollywood A-listers alike, that have been won over by its clever spin on Japanese classics and sleek interiors designed by Philippe Starck.
